Marx explains his view of culinary art and reveals the menu for his two restaurants. From rue de Ménilmontant to rue Saint Honoré and from the Blanquefort lycée to the Centrale de Poissy, this culinary warrior also talks about his exceptional career and the social commitments that took him from the east-end Paris of his childhood to the upscale neighbourhoods of the French capital.
